Simple comfort food

This is the type of food my husband loves.  Simple comfort food.  I like this type of food because it's simple to make and it's not a lot of ingredients and it's real food.















Cheesy Chicken and Broccoli Casserole
Adapted from Amy's Finer Things
Serves 2 adults and 2 small children at dinnertime with smallish leftovers for 1 day for 2 adults at lunchtime

2 C cooked rice (any rice would work)
2 C cooked, diced chicken (this is where those leftovers come in handy when you go and buy 10 whole chickens on sale at Whole Foods)
2 C steamed broccoli pieces (I steamed mine for about 1 minute)
1 carton of Cream of Celery soup (I use a soup by Pacific Natural Foods that's organic)
1 C shredded sharp cheddar cheese
1 C whole milk
Salt and pepper to taste

Gently mix all of the ingredients in a bowl and then transfer to a 9 x 9 glass dish.  Bake at 350° for 20 minutes.

You could get creative and add all sorts of spices to this, I think.  Or you could do what my husband does and add that crazy Sriracha sauce to it as this is his condiment for nearly everything except coffee.
