I'm going back to some our favorites this week. I really didn't consider the weather when I wrote the menu and the temperatures are expected to go up to the mid 80's! Oh well!
Monday - Cheesy chicken and rice casserole (my husband loves these types of meals)
Tuesday - Bean burritos
Wednesday - Egg salad sandwiches
Thursday - Bowtie lasagna except I'll use rigatoni pasta noodles
Friday - Pizza with Mediterranean Crunch Salad
Saturday - leftovers
Sunday - Mother's Day Lunch!
